In 1957, Anacortes fisherman Tom Savidge and his wife Marie
built a backyard smokehouse and began selling smoked wild salmon to local taverns. With
that, Specialty Seafoods (later renamed SeaBear after a Native American legend) was
The tavern owners loved Tom's smoked salmon, but asked him to preserve it longer. Being an
inventive guy, Tom answered their request with a whole new idea in packaging: The Gold
Seal pouch, which preserves the salmon naturally, so no refrigeration is required. This
innovation (for which he received a patent) made it easy for tourists traveling through
the Northwest to take Tom's salmon back home, or to ship it to family and friends. From
this, word spread about "the legendary flavor of the Pacific Northwest."
Today we ship our full line of seafood to customers in all 50 states, and remain dedicated
to the same principles upon which Tom Savidge founded our company decades ago: Make great

In 1984, Gillian and Jack Mathews opened the first Made In
Washington store at Seattle's Pike Place Market. That store brought an entirely new
concept to our area a wide variety of quality products, all made in Washington state by
local artists, crafts people and small businesses.
Today, Made In Washington has five stores throughout Puget Sound, and we remain thoroughly
dedicated to the ideals of that first store: offering a wide variety of quality products
which celebrate the very best of Washington state.

In 1990, highly acclaimed European-trained chefs Gerard Parrat
(proprietor of Gerards Relais de Lyon) and Dominique Place (proprietor of
Dominiques Place) could not find a smoked salmon which met their standards, so they
created one. With that Gerard & Dominique Seafoods was born, in a 2,000 square foot
facility in Kenmore, Washington.
That first year, Gerard and Dominique worked with the their chef counterparts at Morton's
of Chicago, the Four Seasons/Fairmont Olympic in Seattle and Northwest Airlines First
Class Service to build Gerard & Dominiques smoked salmon into their menus. These
marquee relationships continue on to this day.
Over the years, Gerard & Dominique's signature European Style Smoked Salmon has been
served at premier hotels and restaurants across the US, and in countries around the world.
Wine Spectator has called Gerard & Dominiques creation "Simply the best
smoked salmon made in the Northwest, and the only one I tasted that rivals the best smoked
salmons made in Europe." As the word spread and other fine restaurants, hotels, and
high-end retailers began offering Gerard & Dominique smoked salmon, the company moved
from its humble Kenmore beginnings to a brand new 10,000 sq foot facility in Woodinville,
its current home.
Made with only the freshest natural ingredients from the Northwest, Gerard & Dominique
products are carefully hand-filleted and smoked by chef Dominique Place according to
old-world traditions. The process begins with rich, flavorful salmon harvested from the
cold, clean waters of the Pacific Northwest. Fillets are specially seasoned, then
individually smoked over a select blend of Northwest hardwoods, which imparts a subtle,
complex flavor. No preservatives or coloring agents are ever used.

Good day, my friend. My name is Raymond Broussard, and I'm a local historian of sorts. At
least on the subject of TABASCO, the fiery brand of hot pepper sauce
whose story began right down here in south Louisiana and is now chronicled throughout the
I first learned about TABASCO sauce many years
ago from my dear friend, Edward Avery McIlhenny or "Mr. Ned," as we
affectionately called him. It was his father, Edmund McIlhenny, who created the first
TABASCO sauce, and Mr. Ned carried on the secret recipe and family tradition.
I'm still close to the McIlhenny family; I guess you can
call me the resident TABASCO expert. The truth is, I love to tell stories about the early
days of this famous hot sauce from where the pepper plants originated to how the
very first batch of TABASCO sauce was made.
I remember visiting Avery Island many times as a boy, and
again, years later, after Mr. Ned fulfilled his passion for exotic plants with the
extraordinary Jungle Gardens. This beautiful Island is my home now, and I busy myself by
passing on the legend of TABASCO to curious visitors like you. I welcome questions, and
some of the answers may surprise you. The TABASCO story is quite a tale, after all. Let me
